Winemaking

he base wine harvested of overripe berries 28 °Brix, 100 % Furmint, from St Tamás Vineyard fermented to 12 % alcohol and was added to the individually harvested aszú berries from the Király, Betsek and St Tamás vineyards. After 72 hours’ maceration, crushing and pressing, the alcohol fell to 7 %. Subsequently the primary fermentation stopped of its own accord at 12 % at 11 °C.

Wine tasting

“István Szepsy is offering a sweet wine for the first time at the Great Tokaj Wine Auction. Only a very small quantity was made in this vintage as the very hot and arid summer were not conducive to the development of aszú berries. But they managed to pick this small quantity which provided exceptionally rich and perfectly botrytised grapes. The nose is deep and charming, full of sophisticated richness of fruit. Apricot and orange blossom offer the main aromas. Dense in flavour, not yet totally settled, very youthful. The dynamic acids discernible in the mouth are bedded on the very refined, almost soft structure. Aromatics of apricot, honey and intensive spices. Long, as though the permanency of its flavours will never finish. This offers a frenetic experience.” (Gabriella Mészáros)
