Winemaking: The south-, southwest-facing Pajzos vineyard has excellent heat-retaining ability so the grapes here ripen beautifully and become aszú berries easily. In addition to the optimal climate, the Zsadány stream, which forms the southern vineyard border, provides the humidity necessary for the development of Botrytis.

Both the grapes for the base wine and the aszú berries were harvested from the best areas of the vineyard. The aszú berries were soaked for 24 hours in fermenting base wine, then fermented for a further three months in stainless steel tanks. Since then it has lain in new, medium-toasted Zemplén oak barrels in the depth of the Pajzos cellar.

Wine tasting: “If we talk about elegant Aszú style, then this winery is at the forefront every vintage. Its wines are never overdimensionalised, nevertheless everything appears with the cleanest definition in their Aszús. Just like this one. The pleasant assembly of refined Botrytis apricot, grapefruit and stone fruits in the nose with a touch of walnut. In spite of its moderation it has strong acids, a hint of tannin and an abundance of fruit. Already enjoyable, although still at the outset of its development. The flavours are substantial.
